National Pancake day is February 17th! I’m almost 37 weeks pregnant so any day dedicated to pancakes sounds AMAZING! When I heard about this opportunity I knew my family and myself would love it.
T-fal was wonderful enough to supply me with one of their 12″ non-stick fry pan, the OptiCook. This fry pan is fantastic, I love how light weight it is and how it distributes the heat evenly throughout the surface of the pan while being non-stick.
Hungry Jack supplied me with Buttermilk Pancake Mix and Hungry Jack Syrup.
Now it was time to get creative! My kids love pancakes but it’s hard to get them to eat enough protein daily. I decided to make lemon ricotta pancakes to sneak in that extra protein and keep their tummies happy.
The recipe is easy enough (warning: we make a HUGE batch of pancakes because we love leftovers)
Lemon Ricotta Pancakes
- 3 cups Hungry Jack Buttermilk Pancake Mix
- 2 1/4 cup water
- 16 oz ricotta (low fat or regular, we use regular)
- 2 lemons (juice and zest)
- 4 Tablespoons honey
Throw all the ingredients into a large mixing bowl and mix until well mixed. Heat pan on medium and spray with non-stick cooking spray. When pan is heated use a 1/4 cup measuring cup to pour pancake mix into pan. Let pancakes cook until bubbly. Flip when golden brown. Enjoy!

These pancakes are amazing with a little bit of the Hungry Jack syrup added to them. We warmed up the syrup in the microwave and it was ready to go! My 2 girls ate 4 pancakes each! They were full until lunch time.
The T-fal 12″ non-stick fry pan retails for $15.99 at walmart. I think this is a great price for a handy everyday frying pan and am happy to add it to my collection for that price.
