Dairy Free Mint Fudge Recipe

Let me tell you about my Mint Fudge I created a few years back. We were having a bake sale and needed some sweets to offer for donation. I decided I would combine some Andes candies in fudge. I made quite a few of heart-shaped pans. They went over so well in the community, I saw people asking who made them on several Facebook pages. One even giving a story on how it brought back memories of her husband’s late grandmother’s fudge. I felt so special hearing that, I made sure to write down the recipe and send it to her. I would say It was a true hit!
 
One error, though. I’m Vegan. Due to food intolerance & IBS, I can’t even eat my own fudge. My mission? Figure out a way to have the goodies but safely.
 
 Here is the original recipe:
 
 
  • 5oz evaporated milk
  • 1 bag (12oz) semisweet chips
  • 1.5 cups granulated sugar
  • 2 cups mini marshmallows
  • 2 tablespoons butter
  • 5 oz Andes Creme de Menthe Baking Chips

 

  1. Combine Butter, Milk & Sugar till it’s melted and a slow boil, (remove from heat) then add marshmallows and stir till melted.
  2. Add the Semi-sweet chips till melted.
  3. Right before pouring into your pan, add 5 oz (half a bag) of the Andes chips. Mix just enough that they are in the batter but not melted.
  4. Then pour into an 8×8 pan (i put foil in it and spray with Pam or similar). I put it directly into the fridge and let it sit till hardened.

 Now let’s make it DAIRY FREE/Vegan
 
 
  •  5 oz of Cream Of Coconut (Allow a can of full-fat coconut milk to settle -about 1/2 hour. The coconut cream will rise to the top and can easily be skimmed off)
  • 1 bag (12 oz ) Vegan Semi-Sweet Chips
  • 1.5 cups of Vegan sugar (here is a list)
  • 2 cups Vegan Marshmallows
  • 2 tablespoons Vegan Butter
  • 1/4 teaspoon peppermint extract
  • 1/4 cup crushed, hard peppermint candy (hint:  candy canes)

 

  1. Combine Butter, Milk & Sugar till it’s melted and a slow boil, (remove from heat) then add marshmallows and stir till melted.
  2. Add the Semi-sweet chips & peppermint extract, stir till melted.
  3. (Optional) Mix in some of your peppermint candy OR layer on the top after step 4
  4. Then pour into an 8×8 pan (i put foil in it and spray with Pam or similar). I put it directly into the fridge and let it sit till hardened.

 

Wa-la!! Way to go!!
 
While overseas, I was ordering in everything but then again once I bit into something that wouldn’t hurt my stomach, it was worth every cost.
